Protein & Vegetables! Roasted Pork Tenderloin with Salad
You hear us say it every day - Protein and Vegetables. Every meal does not need to be a 10 course Thanksgiving dinner. It can be as easy as Pork Loin and Salad. Simple.
I buy Hormel brand vacuum packaged and flavored pork loins quite frequently as they store well without freezing and are often on sale. Plus they are super tender and cook in a flash.
Place the pork loin onto a foil lined baking dish, it is already marinated and seasoned, so nothing else is needed. Bake in preheated oven at 350°F for 45 minutes or until meat thermometer reaches 150°F.
OR, these are fab on the Grill: Place directly on preheated grill and cook over medium heat for 30 minutes or until temperature reaches 150°F.
Let rest for 5 minutes prior to slicing to platter.
While meat cooks, toss your favorite combination of lettuce, tomatoes, shaved onion, cucumbers in a big bowl with either Olive Oil and Vinegar or our Creamy Italian Dressing you've made. Enjoy your meal!
